Roasting vegetables can be a delicious and nutritious way to incorporate healthier foods into your diet. Take butternut squash for example, this orange veggie packs a ton of vitamin A (which is great for eyesight), vitamin C, and fiber in just one cup and it only has about 80 calories in that one serving!
