I hear from clients all too often that eating healthy is expensive. Myth! It really honestly doesn’t have to be. The biggest food cost is food waste…not using the food you bought and it going to waste instead! So plan ahead and be creative with leftovers and you will save lots of money!
I have partnered with ALDI grocery stores for a few years now because I love, love, love their high quality brands at a fraction of the price. Even after all of these years I never cease to be amazed when I get to the checkout (which by the way ALDI has SUPER fast checkout clerks!) and I see how low my total bill is!
One of the many things I have been loving about ALDI lately is that they are upping their game big time with meat-free alternatives and dairy-free milk-alternatives, and their ever-expanding liveGfree gluten free exclusive line. Their meat-free line is called Earth Grown and they have delish veggie kale, quinoa crunch, black bean burgers and more in addition to dairy-free cheese.
I recently made this Harvest Breakfast Skillet with the Quinoa Crunch veggie burgers, kale, sweet potatoes, and spaghetti squash. Fantastic! And it was for dinner, not breakfast! I love eggs for dinner.
Back to saving money, fresh produce is what I hear the most complaints about when it comes to healthy food being expensive. But again, if you use it all and don’t let it go to waste, it is well worth the price! ALDI has a wide range of fresh produce, including a lot of organic choices. I made these Oven-Baked Zucchini Fries and my kids (especially the 13-year old who hates veggies) ate them up!
I have a mad sweet tooth, so I am always looking for good choices that will satisfy my cravings. I found this recipe for Cocoa Mocha Oatmeal Cookies that are soft,and the mocha drizzle is nice and rich for a definite “yes!” to my chocolate craving.
